alan's advice regarding pdfzone is a good idea, but i'd hazard a guess that
the real problem here is that cyndi and richard's problem is that they're
trying to edit .pdf files with adobe acrobat READER, the free program.

unfortunately, all that one can do with the reader is view and print .pdfs.
in order to edit them, you need the full adobe acrobat package (often
referred to as "adobe acrobat full" or "adobe acrobat writer" to distinguish
it from the ubiquitous reader).

this software is available from adobe for a pretty hefty fee (i think that
it's somewhere around $400, but i'm not sure).

my advice would be to see if a university or library near you has the full
acrobat program installed in one of their public labs, OR, if you have the
documents in any other format (microsoft word works great), adobe offers a
free trial of their online .pdf creation software at
<http://cpdf1.adobe.com/>.  you can make your edits in msword and then
create new .pdf files.

unfortunately, adobe only offers three free trials (they used to offer
unlimited free .pdf creation).  but it's something.

the final thing that i would do is to toodle over to pdfzone and see if i
couldn't find some third party plug-in; i know that somebody used to make a
.pdfwriter plugin that allowed you to print directly from word to a .pdf
file without having the acrobat software; maybe there are some modifications
that you can make to the reader too?
