Sounds alot like a blown headgasket if you ask me.
I doubt the problem was at all related to the filter change. It is possible
that the rad fans failed to kick in at all and overheated the engine. The
rising pressure in the head was probably enough to blow the head gasket. How
you describe the antifreeze and oil everywhere kinda gives me that feeling.
If it was the head gasket, consider yourself lucky it didn't happen on the
road somewhere. Hopefully the heads arn't warped from the excess heat.

I think someone else took a stab at it but I doubt it was mineral deposits
from inside the cooling system. I also don't quite see how a failed fuel
pump would cause the  problem either.
