I project to use Sequoia for a project with JBoss and EJB. Have
anybody has an experience return on this middleware ? Is There any
problems on it ? Can I use it without risks ?

As it is usually the case, it is very hard to get feedback from the open
source community when it gets to user experience.
You can get an idea by browsing the mailing list. The only thing that I
can tell you is that Continuent builds commercial products based on
Sequoia stable versions. We have customers using also open source
Sequoia with JBoss and it is ready for production.
Now it also depends on the underlying database that you plan to use and
if you need any database specific extensions that would not work
out-of-the-box with Sequoia.
