Just reading through this again, and there is a small point. I set the 
helloName in the config:

    <helloName autodetect="false">mail.maxant.co.uk</helloName> 
 
But when I get bounced email (for example the target account is over quota), 
the mail I get from James says it comes from rm-201-29.serve.com.

Can you check if that name comes from the helloName or if it is the server 
name? For consistency, it should be the helloName no?
