Summary: Upgrade Tika version used in tests

The test are currently using the _logicalspark/docker-tikaserver:1.15rc2_ we
should upgrade it to _linagora/docker-tikaserver:1.18-SNAPSHOT-plus-TIKA-2520_.
We could also add the configuration in the _docker-compose_ & in the
_Cassandra-ElasticSearch_ docker implementation.
(we should document that this component is not mandatory).
