For the record here is the serie of ticket we wrote for ES 2.x -> 6.x upgrade 
following more or less the approch suggested by Matthieu.

 - JAMES-2719 Duplicates and migrates the backend ElasticSearch module
 - JAMES-2717 Adopted docker for running tests - won't be needed for 6 -> 7 
upgrade effort
 - JAMES-2765 Migrate apache-james-mailbox-quota-search-elasticsearch
 - The same need to be done for mailbox/elasticsearch - I did not find back the 
issue, sorry.
 - JAMES-2767 Do the switch...
 - JAMES-2766 documents the ops procedure once the switch is done

However this 6 -> 7 upgrade should be simpler:

 - There's no client library change, just an upgrade
 - We already have flexible docker tests in place, and no longer rely on 
Embedded test server.

That's it for the reference of previously conducted work ;-)
