FYI Lan did adapt all the unit tests here:
https://github.com/apache/james-project/pull/318
We likely "just" need to switch the guice bindings to ElasticSearch 7 and
ensures the (JMAP) integration tests passes. (In addition to the documentation/
readme / upgrade instruction changes).
