Yesterday had to fix the build after noticing multiple build fails related to
MinIO tests : [https://github.com/apache/james-project/pull/1978]
It's safer to do like any other third party software we test with, forcing a
tag to not have it break on newer versions and just do fixed upgrades from time
to time to check that everything is still alright.
However build was failing with latest MnIO image on MinIO tests.
Locally I observed quickly some tests could not save big blobs, where the
connection was closed before the end of the transaction. Investigate what
changed and upgrade to the latest fixed tag for MinIO.
