Summary: Adapt RabbitMQ 4.x in tests

RabbitMQ 4.0 has been released a few months ago. It claims to have a peak
throughput 2x than the RabbitMQ 3.13.x cf:
- https://github.com/rabbitmq/rabbitmq-server/releases/tag/v4.0.1
- https://www.rabbitmq.com/docs/upgrade
Community Support for 3.13.x has ended since 26 Aug 2024.
We should attempt to upgrade RabbitMQ (at least in the code first) to 4.0. The
goal is to verify if James can work well with RabbitMQ 4.0.
Note that the 4.0 one seems to be a big upgrade. We should be careful when
upgrading it.
