SMTPServer bind address is the address that will be used to bind the smtpserver server socket. Incoming mail will be accepted to that address.

RemoteDelivery is the mailet that send messages to the outside world: it is a separate "process" and does its own bindings. So, when RemoteDelivery deliver a new mail outside it bind the local endpoint of the socket to "default". If you specify the <bind> option you can force it to bind to a specific address.
