I plan on setting up the end users mail client to delete from server.
And I will do weekly or daily backups of the file repository.

I use the ToRepository mailet pointing to a file:// repository and
with passThrough true.
Please note that James will put 2 files per each mail handled by
itself.. so this is going to be big..
