Just an update from the Kopano community :

Kopano Gateway is an IMAP/POP3 Server, it does not listen to another
IMAP/POP3 Server. You cannot use Apache James as IMAP/POP3 for Kopano. Only
Kopano-Gateway can be IMAP/POP3 for Kopano.

As you can see below[1], Kopano depends on Postfix as an SMTP server.
