Just a guess but I think certain components (especially eip ones) do not use the endpoint attribute to determine where to route the message. Endpoint=endpoint is then used just as a dummy attribute.
For example static-recipient-list routes the message to all targets defined in "eip:recipients", static-routing-slip routes the message to all targets defined in "eip:targets" and so on.
