My bet is that is is possible to do; but I'm not that strong with applets,
so I don't know the answer.

I don't know what your approach is, but I have written servlets that open up
an Excel screen with whatever data I want or need.  Then the user is able to
update, edit, save, etc.  To do this, simply set the contentType to
application/vnd.ms-excel.

Since Excel is capable of reading HTML, you can write the servlet to output
normal HTML.  through the PrintWriter object.  You can create tables, change
fonts, etc.
