That is in the LDAP schema mapping tab.
To find that, in ZMI go to your plone site -> acl_users -> your AD
plugin -> contents tab -> click 'acl_users' here -> LDAP Schema tab
It would help if you look at the README for PloneLDAP some more, also
there is lots of info on plone.org, and google is your friend. ;-)
