as I note: yes you can use your approach - but I wonder if it really 
suited to what you do...
So I would rather use the points as input and apply an interpolation 
method [my opinion after reading about this lately]. Otherwise I am sure 
there is a GRASS function that generates DEMs out of contour lines 
directly [similar to the ANUDEM function].
Actually - how about doing both and then comparing the results?

the only way to display them nicely, so far, is to use the raster 
"normalize" (from 0..1) function in Sextante. Then everything is 
correctly displayed. But, you can not do any further operations based on 
that raster: it is just for visualisation.
I also wrote a function that converts a raster loaded with the sextante 
option or coming from sextante into a point or a polygon layer. If that 
would help you I can add it to the nightly build in a couple of days.
