I wouldn't want to make the basic GRASS setup more complex than it currently is. As it is, one of the greatest strength of the GRASS SEXTANTE interface is that it is so easy to set up that even people who never used GRASS before can do it.
If we introduce too many options, then this strength will get lost. Alternatively, it would be possible to implement an "advanced options" page where settings like this one could be made.
