If you just want to use another GRASS 6.4.x installation, then you just open the file "sextante.settings" inside your "sextante" folder, and change the GRASS path values in there.
If you have additional modules or want to use a GRASS 6.5 (SVN) installation, then you also have to produce the additional module description files in XML format. As far as I know, SEXTANTE is currently missing a function to do this. We will probably have to provide a little script that can be run by the user to produce these files for any GRASS installation. Sorry about the hassle, but we are currently in a transitional phase.
