Two issues here, I think: 1. There seems to be a problem with the right mouse button on some Macs. Use CTRL+Left Button instead to get the context menu (I will file a bug tracker ticket for this). 2. You need to set the "no data" value in the SEXTANTE options, not the properties for the raster layer in the gvSIG View.
