Have you tried asking them? I'm not thrilled with Slack as a forum, but they do have a lot of discussion going on via Slack channels. They also have an online forum: https://forum.openfoodfacts.org/ Plus, they seem to have monthly virtual discussions. You could contact them directly by email or through any of these options. They may be able to give you more details about their app and their design choices. Personally, I think their database is much more impressive than the app. It's Open so anyone can use it for research, projects, etc.
