Gain controls (capture and playback) are no longer displayed for Pulseaudio. We now rely on pavucontrol as they are redundant control parameters, you can mute application from there. Switching to ALSA api (in edit/preferences/audio) you'll see that application gain control and mute is already implemented. Regards.
