Patrick,
I've been using STN for a few months now, and one of the first things I tested was 
have several quake 2 clients behind the STN box connected to the same server out on 
the internet. It worked perfectly
with out having to configure any in/out bound settings. However if you want to run a 
server you do need to configure the settings, but other wise as far as I know you 
should be able to play a game of
quake by simply running the game and typing in connect <server ip> at the console.
