I'm a bit of a newbie with shoes, so I'm not sure about all your questions,but I do know for sure that the sound is doable. http://rubylearning.com/blog/2008/05/31/a-teeny-weeny-mp3-player-using-ruby-and-shoes/ Should have some example code for loading/starting/stopping etc a sound. It uses the video component.
