Specialty in Northern Michigan is "planked fish", really a treat.  Cooked (broiled) on an oak plank which has been soaked in water for several hours so the wood won't burn. Piped with garlic whipped potatoes. My mouth is watering!

In the Pacific Northwest the plank is red Alder!
