That's a good point. A while ago my home broadband went down, and once it looked like it wasn't going to be fixed quickly I changed my MX record to point to a host I run at work (with a fixed IP), dialled up via my mobile, and used SSH to tunnel port 25 on the remote machine back to my home server. As a temporary measure it worked remarkably well.
