There isn't a way to do this in Shotwell itself (yet - this seems like
it might be worth adding a feature for at some future point), but if
you do need to strip the EXIF date/timestamp from an image, there is a
freely-available command line tool named JHead that can do this
(please see your distro's package repository or
http://www.sentex.net/~mwandel/jhead/ to get it).  Among the many
options it has, one will strip the EXIF header completely out of an
image, leaving behind only the pixel data.
