Kent, first, I highly recommend using exiv2 rather than exif to look at metadata. You can use it like this:
$ exiv2 -pa DSCN1010.JPG exiv2 will tell you about EXIF, IPTC and XMP metadata, whereas exif displays only EXIF. We have a wiki page that talks about which metadata tags Shotwell and other programs write to: http://redmine.yorba.org/projects/shotwell/wiki/PhotoTags Unfortunately the table formatting on that page was destroyed when we migrated from Trac to Redmine last year. The page is still somewhat readable, however.
