We typically did 1 large meeting each month. The last 2 semesters, they were our security workshop series. We also have a weekly meeting to keep everyone up to date, let people get involved in the projects (Honeynet, CTF, VoIP, IPv6), and usually a quick little informative lecture. Short lecture topics included intro to crypto basics, a forensic analysis of a machine that got cracked, new virus/worm analysis, etc.

there to help them in person along the way.

Patrick,

Does ComSoc have weekly meetings? I thought it was monthly.
  Thanks,
