RaiMan proposed the following answer:
sikuli-ide.jar is a fat jar, that contains any other stuff needed.
So as a Maven dependency it does not need any other artifacts.
Nevertheless a class ImagePath only exists with 1.1.0+
For 1.0.1 usage in Java projects there is sikuli-java.jar (setup option 3) -
