RaiMan proposed the following answer:
you are using some Python stuff, that might depend on some Java features
in the SikuliX/Jython environment, that might have changed from 1.6 to
1.7 internally.
If you want to switch to Java 7 on Mac, I recommend to upgrade to
version 1.1.0 (http://sikulix.com), that has Jython 2.7 bundled.
Or you might simply make a test with pure Jython 2.7 and Java 7, wether
you pymongo stuff works.
