Thanks for your help.
After running:
/usr/libexec/java_home -V
Java 6 was the only version showing up, very odd.
Then running:
java -version
Confirmed that Java 6 was the active session.
So, simply running:
java -jar /Applications/SikuliX.app/Contents/Java/sikulix.jar
Generated a good application that launches.
