RaiMan proposed the following answer:
The browser support on macOS is still on Java 8.
So just do whatever Apple suggests to do about Java 8.
For SikuliX IDE and script run just do it from a Terminal session, where
you can select the Java to be used (11 in our case) as discussed here.
