This sounds more like a fig leaf that's been blown away. It was there
to give restaurants elbow room when cornered by animal rights
activists.

I personally find it fascinating and appealing even though I am
vegetarian to watch a green slimy looking lobster go into the hot
water and emerge a brilliant and healthy looking shade of red. The
fact that it was probably extremely painful to the creature doesn't
enter my mind at that moment since the aesthetics of the act are so
good. Now, if the crab were to squeal and cry, that would change
everything.

OTOH, if I ate sea food I would be concerned about the fact that the
creature feels a lot of pain before death. In some animals trauma
releases toxins into the blood stream that is said to make the meal
less tasty at the very least.

I don't necessarily agree that this is light research, it sounds like
it overturned a long held belief, and that might lead to new things.
