Actually there's quite a lot of information about the transition from hunter-gatherer to pastoral/agrarian. Besides the Encyclopedia Brittanica article Udhay cited, there are both scholarly and popular writings on the subject. I find them fascinating, especially the parts where they explain exactly the question about why people would make that transition when it actually reduced how happy they were.
