I use spelt when I make bread for my husband and now and then I will try a 
slice.  I don't really know if I can eat spelt or not because it is rare I eat 
the bread and haven't used it in other things.

Found that doctors/allergist really can't help you with some problems.  Have 
been tested numerous times with out it showing up.  When I eliminated things 
from my diet and slowly added items back is when I found out what was causing 
the problems.  If you haven't been eating wheat and they test you it won't show 
up either.  

My brother saw a program on Modern Marvels about the genetically modified grain 
and how bad it was for you and that is what keyed my research into it.  They 
are changing the DNA of the grains so they can use round-up and other chemicals 
in the fields without killing the crop itself.  GM is outlawed in most 
countries over seas.  They also use genetic markers in these permanently 
changed grains that sometimes make us resistant to antibiotics.  There are a 
lot of articles out there about the GM Foods and the dangers.

  Dianne, I was just wondering if you can tolerate spelt flour? Some who have 
wheat problems can use spelt. I agree with Jodi about celiac. I do not think it 
is rare and unfortunately most doctors dont realize how prevelant it really is 
and many folks who have health problems should  get tested although like I 
previously stated, from the research I have done, some people can test negative 
and still have it. IT was interesting to read in someones post that they did 
not have issues with wheat until it became genetically modified. Maybe this 
accounts for the rise in celiac disease.
