Okay, I made another batch... I started with only 6 quarts, ran the 
heat a little higher, had to add a couple of liters of pre-boiled water 
before I felt comfortable leaving it on overnight... So, of a total of 
8 liters, 3 were distilled, 3 were left in the pot, and 2 were lost to 
evaporation. This knocked 2-3 hours off the cycle time, finishing in 
about 15 hours instead of 18.

So I'm obviously pushing the available surface area about as hard as I 
can with room temperature air for cooling. I've been thinking about 
ways to build a higher area condenser using inexpensive components... 
We'll see.
