I currently use the air bubbler method of stirring when making EIS. Magnetic stirring is more complex than I want.

Not necessarily complex. I use an inexpensive magnetic aquarium pump for stirring mine. A bubbler will introduce carbon dioxide into the water increasing the amount of silver carbonate you make.

I have made them before - about 40 years ago. I am thinking of using the ultrasonic generator from an ultrasonic humidifier as a stirrer. Has anyone tried this and what was your results?

Interesting idea. I am not sure how much gross circulation that will give you. You might try it with some small plastic balls or flakes, to see if it introduces actual circulation or not.
