I am using an SG6 to make my EIS.
My current practice is to decant the EIS out of the jar leaving the sediment
behind. I then wash the sediment out of the jar and get it ready for the
next batch.

Is there any problems with this, or is it OK just to leave the sediment in
the jar and let it age like that?

Tom,
I leave the sediment and approx 1/4 of the last batch behind in the jar. This "seeds" the next batch and considerably reduces the brewing time. Unless I have a batch turn very yellow, I never completely empty the jar, and do not worry about the sediment left behind, it doesn't bother anything.
