You are basically making a tincture of the herbs using vinegar as the extracting solvent and preservative. There is a lot of info on the web on making tinctures. Usually you would use a distilled vinegar rather than one with "mother" for tincturing and I see no value added using a vinegar with mother. if you use distilled vinegar there is no need to refridgerate the tincture as the vinegar will preserve it. If you plan to store the tincture for many years I would make an alcohol tincture rather than a vinegar tincture.
As for the sun, I store the tincture in a cool dark place as is recommended for tincturing.
