And there's just been a huge stink raised here in Australia recently because fake honey is being exported labelled as honey from Australia??? As you say, the only honey to get is honey from the beekeeper (if that's possible), all other honey has been blended and tampered with and in all probability has additives which slows down the action of setting hard and going sugary whilst in storage.
