Dear Friend:
The holiday season is a time to give thanks for all our blessings, to reflect
on our lives, and, of course, to over-indulge when it comes to eating.
Don't worry...I'm not going to be the Grinch who ruins your Christmas dinner
by telling you how unhealthy it is. It's not a great sin to sample the
delicious
foods available to us in abundance at holiday get-togethers.
It's just that the standard American diet is pretty lousy throughout the rest
of
the year anyway, being deficient in fiber, important vitamins, and minerals,
and also being loaded with saturated fats. Because these factors increase
blood
cholesterol levels, bingeing on high-fat foods can make a bad health situation
worse, or even life threatening.
High Fat Means High Risk
A 1997 University of Maryland study showed that prior to eating a high-fat
meal the blood vessels of participants in the study were able to dilate by 21%,
helping to maintain normal blood flow and preventing damage to arterial walls
that can lead to atherosclerosis or clogging of the arteries. However, four
hours
after the meal these blood vessels could only widen by 8% (reported in

What's so unsettling about this finding is that when blood flow is diminished
the chances of experiencing heart trouble during a stressful situation
increase.
The good news about the study, however, is that it also provided a "quick fix"
step that you can take this holiday season to help prevent this from happening.
Before I go into what it is, it would help first to understand the role
cholesterol
plays in cardiovascular health.
Don't Blame Cholesterol
The medical community has been fixated on high cholesterol levels for the
past 20 years, leaving many people with the impression that cholesterol is bad.
Cholesterol is actually a vital component of your overall health. The liver
uses it to make bile salts, which aid in fat digestion. Your cells require
cholesterol
to construct their protective outer membrane. And cholesterol is one of the
essential building blocks in the formation of hormones from the adrenal,
ovarian,
and testicular glands. If we don't get enough through our diet our bodies
simply
produce additional amounts.
As I discuss above, highly elevated cholesterol levels are symptoms of deeper
problems, usually of a dietary nature. Insufficient fiber, lack of essential
vitamins and minerals, and large amounts of saturated fats make it difficult
for cholesterol to dissolve in the blood. When this happens, cholesterol
accumulates
on arterial walls and eventually clogs arteries. To learn about my heart

After consuming a high-fat meal, blood levels of triglycerides increase. In a
roundabout way, triglycerides hamper the ability of your blood vessels to widen
when more blood and oxygen are needed in the cells. That's where the simple
solution I mentioned earlier comes in.
Vitamins to the Rescue
The University of Maryland study shows that when there are adequate levels of
antioxidants like vitamins C and E also circulating in the blood, these
triglycerides
pose less of a problem. By some mechanism, these antioxidants prevent the
triglycerides from blocking dilation in the arteries.
The study found that when participants took 1,000 milligrams (1 gram) of
vitamin C
and 800 I.U. of vitamin E prior to eating a high-fat meal, their blood vessels
were still
able to widen 17%, versus the starting point of 21%.
Of course, this is just a quick fix, and I'm certainly not telling you that you
can stay
healthy by eating high-fat foods and counteracting it with supplements. It's
just that
taking your vitamin C and E before attending holiday feasts this year is worth
considering.
When it comes to your vitamin intake, however, I encourage you not to be so
limited. A good foundation for your overall health is to take a solid
multivitamin

Regardless of what supplement you choose, be sure it contains the natural form
of vitamin E and tocotrienols, which help prevent the oxidation of LDL ("bad")
cholesterol.
Also, because the typical diet lacks the proper amount of daily fiber needed to
promote normal cholesterol levels, I highly recommend that you eat whole
seed flax every day (not flax oil...it doesn't contain fiber). Along with high
fiber,
flaxseed has a plethora of everything that's good for you, including essential
fatty acids (EFAs), protein, and vitamins that help maintain healthy
cholesterol
levels.
Just the Flax, Ma'am
As ALTERNATIVES subscribers know, whole seed flax has been an essential
part of my recommended daily nutrient foundation for years. Unfortunately,
many health food stores carry pre-ground flax. I don't recommend using this
form of flaxseed because it has lost many of its potent nutrients due to
oxidation.
