Hi Dan,

It's the "avidin" in the raw egg-white that binds with biotin. Cooking the egg-white deactivates the avidin but also alters all the proteins. But, the egg yolk contains lots of biotin. If you're going to eat raw egg-whites, make sure you eat the yolk too. I add raw egg yolk to my cat's meat on occasion, but leave out the egg-white since they don't like it anyway.

Do you know if it is in the white or the yolk of the egg, or both?
For instance, I have seen recommendations to eat raw
egg yolk daily but not to eat the egg white.  One recommends
only including the raw egg white in the diet if one is going to
perform strenuous physical exercise.
