Hmm .. just a coco lover, not a specialist.
One way to find out is: Look at the color of the outside. It should be greenish.
Look at the size .. they should not be too small.
Discard of brown coconuts. They have probably been in dryness for months.
Shake the nut, and see (hear) if the liquid, the"water" is moving inside. This is easier when the nut has been peeled; there must be liquid in it. If you hear the liquid moving, most probably the coconut is okay, although those cut off ("peeled"), only the hard nut remaining (brownish/black in color), it is harder to tell. (the color of the whole thing's outside tells it's story) Peeling the tissue off, or cutting it is quite a job. Don't do it if you're not used to it, just to save your fingers! If you want to learn, start cutting with a very sharp big knife, or a machete, from where it hung from the tree. Comes a moment when three eyes on top of the hard kernel show up (don't take away all the "barb", it is far too much labor .. just work away from the top down, like you do an apple. One of these three eyes is soft, and you can pinch it with something sharp.
Pour te "water" out, and drink, or use as a remedy.
Then break the coconut open (with a hammer, or just slamming it against the floor or the wall), to be able to peel off the white flesh inside with a spoon '(lipla' it is called in our community). It is delicious, and lends itself for many a sweet to make from it.
Well, that is about it.
