Greetings Cynthia,

It would be nice if labeling was standardized, but it's not.

I've seen it labeled "Distilled Water, purified by steam distillation."
Some mention ozonation as well. As long as they say "distillation" in
there somewhere it ought to be good.

"Purified," "filtered," "spring," "reverse osmosis," or "drinking"
water are all *NOT* what you're looking for. "Deionized" is another
possibility that *might* work if it's very pure, but is still not as
good as distilled.

If you can't get something that says "Steam distilled" or "steam
distillation," don't sweat it, as long as it is "distilled." Just give
it a try and see what happens. At most it sets you back a day and a
dollar. It won't create anything so dangerous you should be fearful.

If it came down to an emergency situation, I'd even use non-distilled
water. It would not be good for the long term, but in a critical need
it'd be more important to have something that worked than something
that was perfect. In that situation, you'd just have to know to only
brew for a few minutes instead of a few hours. The reaction happens
that much faster because of the impurities in the water.

Please let us know how it works for you.

Be well,

Mike D.
