I would suggest going to some estate sales.  My 94 yo MIL has an entire
collection of aluminum pots and pans, which I despise because I was
indoctrinated against them, I think by Adelle Davis? and also my uncle's
mother was against aluminum cookware and lived to be 105.  Co-incidence?

Regular Corningware casseroles can also be used on the stove top, I think.
They make special handles that attach to the ceramic "handles" and lift
them off the burner.  Also, if just the nickel is a problem, perhaps cast
iron frying pans or iron omelet pans would work?
