Chris, I wish to do this too, particularly as the MIT Simile site was unavailable most of yesterday. There are various posts and pieces of documentation that describe how to.
I have followed the instructions here: http://simile.mit.edu/wiki/Exhibit/2.0/Running_Exhibit_Yourself, and found that I can run locally through Jetty serving http. However, I want to just reference the file system. There are also instructions for that but I haven't quite got it working yet. Ideally a standard download would contain the conditional logic to allow file, local-http and internet http. I'm new to this (and very impressed by Simile) so others may be able to offer better responses.
