First, make sure you're running at least 1.8b8. Look under the SMTP settings.

(1)
SMTP Auth: this will relay for any user that supplies a valid 
username/password combination. The users' email clients have to 
support SMTP AUTH, but most do these days.

(2)
Set "Authenticated IP's are treated as clients" to a reasonable 
value, say 60 seconds. When someone checks their POP account, which 
requires a valid password of course, their IP is considered a client 
IP for 60 seconds. Most mail clients will do a "check before send" in 
order to activate this feature.
