DNS records question

How do I set up my MX records so that my POP3 and SMTP servers are mail.mydomain.com and smpt.mydomain.com?  The only way I can get things to work right now is to actually use my IP address when setting up an account on a mail client.  This is causing problems, as many organisations won't send mail to andrew@<IP ADDRESS>.
