Either was stable, but both on the same (6100) would ocassionally lock up. I now have SIMS and MacJordomo running on the same 6100 and I don't recall when it last had a problem. If you've got the hardware for it, you might want to separate mail and web. This also lets you move the web server to OS X/Apache without abandoning SIMS.
