We use a SIMS server in front of ASIP servers for the other direction: to secure the server against being used as a relay. ASIP servers don't really, IMHO, have good relay-prevention mechanisms. So in the sort of "typical" school situation where you have a reasonably secure LAN that's NAT routed to a less-secure WAN, we have found that it's a good idea not to allow direct WAN SMTP access to the ASIP, and instead use the SIMS server in between (configured as in Steve Linford's message).
In case even the school LAN is insecure, then you may find it useful to use the SIMS server for both LAN and WAN SMTP relaying. In this case I usually force users to use authenticated SMTP for all messages, and don't make any host trusted. It requires you to enter account info twice---once on the ASIP server and once on the SIMS server---but you can still use the ASIP server as both the mailbox server and the file server, and account updates can actually be transferred to the SIMS server via Appletalk export/import (although I've never had the volume necessary to do it this way).

We would rather not re-enter all the accounts into another server.
Are MX servers simply configured to send/forward all mail via another server?
